1 1/2 cups coconut milk
1/4 cup chia seeds
1 tsp pure vanilla
1 TBSP maple syrup
Combine all ingredients in large bowl. Whisk well. Refrigerate and whisk every 10 minutes, for half hour to prevent lumpiness. After 30 min pour into 3 serving dishes, cover and refrigerate for at least 3 hours to allow the chia to expand. Garnish with fresh berries and other fruit.
